Homemade Tofu Spread with Sun-Dried Tomatoes (vegan)
Spreads, a timeless vegan classic. Long before plant based alternatives like nut-based cream cheese entered the market, plant based veggie or herb spreads were THE base for any kind of vegan, savory sandwich. While there’s a lot more variety nowadays, I think we should still not forget about our good old veggie spreads, as they can do a lot more than just be a topping for a piece of toast! Doesn't matter if used in a creamy pasta sauce, as a dip or as part of a rich salad dressing - a nice, creamy and flavorful spread can be just the thing you need!
And because we all probably already emptied a lot of those little spread jars, which are now slowly but surely taking over our cupboards (at least that’s what’s happening in my kitchen, whoops), I’m presenting you this recipe for homemade tofu spread with sun-dried tomatoes today! (How many times did I use the word ‘spread’ in this little text introduction now? … spread, spread, spread!)

Homemade Tofu Spread with Sun-Dried Tomatoes
Ingredients:
200g plain natural tofu
5-6 sun-dried tomatoes in olive oil
2 tbsp olive oil (or oil from the sun-dried tomatoes)
1 lemon
1 clove of garlic
1 tbsp nutritional yeast
1/2 tsp paprika powder
1 tsp soy sauce or tamari*
a pinch of salt & pepper
a few chili flakes (optional)
1 spring onion (optional)
Instructions:
Combine all ingredients except for the garlic, lemon and spring onion in a blender and mix until you get a creamy consistency.
Finely chop or grate the garlic and sauté in a pan on medium heat for a few minutes until fragrant. Then add to the blender along with the juice of the lemon and blend again.
Lastly wash and chop the spring onion and garnish the spread with it. You can fill the spread into a small, clean glass jar and store it in the fridge for up to a few days!

*Notes:
Tamari is a gluten-free soy sauce alternative, so if you want to make this recipe gluten-free, make sure to use tamari instead of regular soy sauce!
