Easy (& slightly healthier) Vegan Chocolate Chip Cookies

If had to choose one sweet treat to eat for the rest of my life, it would be cookies. They’re cute and small, they can be crunchy or chewy, sugary-sweet or more on the healthier side depending on the recipe and they come in all kinds of flavors. Also: mixing a simple cookie dough is the easiest thing on the planet and if you’re not in the mood for baking at all you can technically just eat the dough by the spoonful.

So now that my love for cookies has been declared, it’s no surprise that I had to whip up a nice little cookie recipe when I got an amazing package from Share containing some of their new food related products like flour, vegan chocolate and plant milk! So without further ado, let’s get comfy and bake some cookies!

 
 

here’s the recipe for:

Easy (& slightly healthier) Vegan Chocolate Chip Cookies

Ingredients:

  • 130g wholewheat flour*

  • 75g oats

  • 60g coconut blossom sugar*

  • 100g natural unsweetened almond butter

  • 60g plant milk

  • 1/2 tsp baking powder

  • a pinch of salt and vanilla

  • some vegan chocolate*

Instructions: 

  1. Preheat your oven to 180°C and line a baking tray with parchment paper or a silicone baking mat.

  2. Chop up your vegan chocolate and set aside.

  3. Combine dry ingredients, except for the chocolate, in a bowl. Then add the wet ingredients and mix everything together until you get to a cookie dough consistency.

  4. Stir in the chopped up chocolate, form small round cookies and place them on the baking tray.

  5. Bake the cookies for about 12mins until golden brown and let them cool slightly for a few minutes before serving.

Probably my favorite go-to cookie recipe.

 

*Notes:

  1. I used wholewheat flour in this recipe but I’ve also made the cookies with regular all-purpose flour before and it worked just as well, so you can use whatever you have on hand. If you’re using a finer flour like all-purpose, you just might need to add a little extra flour if you’re cookie dough comes out too sticky, as wholewheat flours tend so soak up more moisture.

  2. If you don’t have coconut blossom sugar, you can sub this for regular white or brown sugar or any other granulated sugar of choice.

  3. I used vegan dark chocolate for this cookie batch, but you can actually add anything you like! Vegan white or “milk” chocolate work just as well and also nuts, raisins or dried cranberries taste amazing!
