Easy Homemade Blueberry-Lemonade without refined sugar (vegan)
Hi, hello, here’s another drink!
Okay, who would’ve thought I’d post another refreshing beverage idea right after telling y’all that I basically only drink tap water? Well, in my defense, I’ve to say that I made both of these drinks in one go, so don’t worry, I’m still as boring as before when it comes to everyday drinking habits!
However, if you saw my easy, homemade green tea lemon ice tea but weren’t intrigued, maybe this blueberry-lemonade will be just right for you! It’s easy, slightly tangy and the ultimate argument (at least for me) for trying this drink: You can suck the little blueberries up through the straw just like tapioca pearls in bubble tea. Unbeatable.
now let’s get to the recipe:
Easy Homemade Blueberry-Lemonade
Ingredients:
for the blueberry syrup:
100g blueberries
50ml water
1-3 tsp vegan honey or agave*
for the assembly of the lemonade:
some tap or sparkling water to dilute the syrup
1/2 lemon
a few ice cubes
some more fresh or frozen blueberries
Instructions:
For the blueberry syrup, combine 100g blueberries and 50ml water in a small sauce pan and start boiling the mix until blueberries start to fall apart.
Add the vegan honey and continue to boil on low heat for 1-2 more mins. Then take off the heat, pour the syrup through a fine strainer and let it cool completely.*
To assemble, add ice cubes to a glass, fill to 2/3 with water and add syrup and lemon juice to taste. Stir well, add more blueberries and optionally decorate with some more vegan honey. Enjoy!

*Notes:
Again, you can use any kind of liquid sweetener you like for this recipe. Other options would be maple syrup, rice syrup, date syrup,… you know the drill.
This recipe makes about 80ml of blueberry syrup, which will be enough for a few glasses of lemonade. Because of the low sugar content, the syrup will be rather thin and liquid and not as sticky as regular syrup!
